1 cup regular flour
1 tsp. white sugar
1/4 teaspoon of salt
3 eggs
2 quarts milk
2 tablespoons melted butter


Set aside the flour, sugar, and salt that you sifted together. In a large mixing bowl, combine eggs and milk with an electric mixer. Mix in the flour mixture until smooth, then stir in the melted butter.

Over medium-high heat, heat a lightly oiled griddle or frying pan.

Pour or scoop the batter onto the hot griddle, about 2 tablespoons for each crepe. Tip and rotate pan to evenly distribute batter.

Both sides should be brown. Rep with the remaining batter. Serve immediately.
